Based on my personal experience & research, you can assume the average person will graze across three different appetizer items in a given hour. Don't want to do that math or figure out what an ounce means? Here is a general guide to estimated quantities per person.
What is an ounce? Typically, 2 ounces = a "handful" and 3 ounces = a "palm"
Crackers/bread/baguette: 3 crackers/slices per item per guest per hour
Fruits and veggies: 2-3 ounces per person
Cheeses: 3 ounces per person
Chocolate: 2 ounces per person
Dips: 2 ounces per person
Filler foods (i.e. nuts, pretzels, dried fruits, olives, etc.): 3/4 cups per person
